A well established and respected language school can be found at the Centre International d'Antibes. Here you can combine French language lessons with French cooking or wine tasting courses as well as taking the standard short or long-term courses. There are also family and teen courses.
Over at Villefranche is the famous Institut du Francais complete with language lab and its philosophy of total immersion, this is the course for those who need to quickly learn to speak French. Four weeks is the normal enrollment period. Having done this French course ourselves we'd highly recommend it: its tough, but effective.
